Shiraz are mostly tannic and well structured red wines but increasingly, winemakers around the world are producing fresh and fruity rosé versions. They produce a drier style of rose with an intense ruby-red colour, fruity aromas of strawberry and raspberry as well as hints of spice.
Successful matches with Shiraz Rosé
With its gorgeous flavours of strawberry, cherry and cranberry, Shiraz Rosé is the perfect summer wine, served well chilled with salads and terrines.
Crisp and dry with quite a lot of body, Shiraz Rosé goes really well with seafood and fish dishes, such as grilled prawns in garlic butter.
Try Shiraz Rosé with a bowl of ripe strawberries sprinkled with sugar and fresh mint.
Prawns, Beetroot Leaves and Goats Cheese Salad
30g Prawns
20g Ripe goats cheese
Beetroot leaves
1 Garlic clove
4tsp Balsamic vinegar
Olive oil
Salt and pepper
For the sauce:
5 tbsp Honey
4 tsp Lime juice
4 tbsp Light Soy sauce
1 tsp Chilli Powder
1 Garlic clove
First, prepare the sauce. Place all the ingredients except the lime juice in a pan; heat until the sauce thickens slightly. Allow to cool and add the lime juice to maintain freshness. Set aside.
Cut the goats cheese into sticks
Heat the oil in a pan, add the garlic and chilli powder until golden and sauté the prawns.
In a bowl, season the beetroot leaves with olive oil, balsamic vinegar, salt and pepper.
To serve, arrange towering layers of the beetroot leaves and prawns on a plate, garnish with the honey, soy and chilli sauce and decorate with goat cheese sticks.
?Shocking pink in colour, this is a rich rose showing sweet red berry and strawberry fruit with a spicy. almost savoury twist. There are big flavours here that would match oriental prawns.?
